Ingredients
  • 1piece local white flesh fish, diced
  • 1Tablespoon Coconut oil
  • 1teaspoon Grated turmeric
  • 1-2Tablespoons Grated ginger
  • 2Cups chicken or fish bone brothor equiv in concentrate and 2 cups hot filtered water
  • 1Cup Kultured Wellness Coconut Yoghurtor 1 cup of coconut cream
  • 3stems Shallots – chopped
  • 4-5 Kaffir lime leavesscrunched
  • 3 Cups Greens – I used beans, brocolli and bok choyOther ideas – baby spinach, celery, zucchini etc
  • 1/4cup Chopped Corianderfor garnish
  • Generous pinch of salt & cracked pepper
Instructions
  1. Add coconut oil to large fry pan on medium heat. Once melted, add ginger, turmeric and shallots to pan and cook for about 2-3 minutes.
  2. Add in greens, kaffir lime leaves and broth, cover and bring to boil.
  3. Add in salt, pepper and coconut yoghurt or cream. Mix until well combined.
  4. Add in fish pieces to simmering pan. Make sure all pieces are under liquid and cook covered for a few minutes. Check a piece of fish to see if cooked through. You want it just done so it it’s nice and tender. Serve into bowls and garnish with coriander
