Ingredients

400ml Can
Ayam Coconut Cream

Organic vanilla bean powder
Or use vanilla essence or vanilla bean paste

Organic grassfed beef gelatin
I use Changing Habits. If you prefer a firmer dessert – use 2 Tablespoons

Sweetener of choice – stevia, honey, maple syrup
Or you can even skip the sweetener

Food grade Peppermint essential oil
Instructions
Add coconut milk to a medium saucepan and sprinkle gelatin over it and leave to bloom for a few minutes.
Place saucepan on medium heat and continuously stir/whisk until powder is dissolved. You want it just about to boil but switch heat off just prior.
Whisk in Cacao, vanilla, sweetener (if using one) & add 1 drop of peppermint oil. Taste mix. Add one more drop if desired.
Pour in to 3 ramekins and place in fridge.
Take out of fridge about 10 mins before eating. You can grate some organic chocolate and place a sprig of fresh mint to garnish if you wish.
